From Seed to Sauce: The TNT Peppers Journey

Every journey starts with a step as does every fiery bite starts with a single seed. Our process is as much about patience and care as it is about heat and flavour. From the moment we select the best seeds to the time our brined whole peppers reach you, every step is done with enthusiasm, passion, a deep respect for nature and some luck if everything goes as planned. As Mike Tyson once said: “Everyone has a plan until you get hit in the face”. Here’s how we take our chillies from seed to sauce.

Germination: The First Step

Great peppers start with great seeds. Our germination process is simple, efficient, and reliable. Using a plastic container or Tupperware, we place our seeds on a moist substrate—whether it’s a paper towel, cotton buds, or coir. The key is keeping the environment humid but not soaked. By maintaining moisture and warmth, the seeds sprout strong, eager to grow into the next generation of TNT Peppers. I know there are other methods involving expensive kit and lab coats, but I found that this works just fine. Just make sure container is placed on a mostly sunny place, like a spot on your stoep somewhere. Once they start sprouting, go ahead and carefully transplant the sprouts to either a seedling tray or their own pots. I use a mixture of coir, fine compost and soil for my seedling mix. I prefer a mix of one part coir, one part fine compost and 2 parts soil. Keep the seedlings moist and in a sunny location until they grow a set of at least two true leaves and then transplant into beds. This takes about a month.

Soil Preparation: Building a Strong Foundation

We don’t just plant our seedlings in plain soil—we create a thriving ecosystem for them. What they don’t say about this approach is that it does take a bit of time to get system going. Our raised beds are built using whole plant matter like straw, cuttings, sticks, and decaying wood, layered with nutrient-rich chicken manure. This natural foundation decomposes slowly, enriching the soil with organic matter. A top layer of compost and soil ensures the perfect balance of aeration, drainage, and fertility. This approach allows us to grow incredibly resilient, productive plants without relying on synthetic fertilisers or chemicals. This also regulates soil temperature and moisture retention.

The Plant’s Journey: Growth, Fruit, and Harvest

Once the seedlings are ready, they’re carefully transplanted into our prepared beds. With the right combination of sun, water, and organic nutrition, they grow strong, producing an abundance of vibrant, flavourful peppers. Our closed-loop approach ensures that everything used in our farming process comes from natural, sustainable sources. No synthetic chemicals—just nature doing what it does best.

When the peppers reach their peak, they’re hand-harvested with care, ensuring that only the best make it to the next stage. The fresh chillies are then brined whole in a carefully crafted mixture, preserving their crisp texture and bold flavour while enhancing their natural heat.
